Little Gray Farms would like to introduce the first locations to serve this year’s harvest of tasty escargots!
Below is a photo by Derek Ronspies, owner and master chef at his restaurant, Le Petit Cochon, in Seattle’s Fremont neighborhood. Derek has gone beyond the traditional and created a wonderful dish of bone marrow with Little Gray Farms’ escargots. I encourage everyone who can visit Le Petit Cochon to do so—even if you don’t have our snails!
The second restaurant is Stumbling Goat Bistro on Phinney Ridge. Chef Josh Theilen was enthusiastic about the opportunity to use fresh, locally grown escargots at his place. And we are enthusiastic about providing them. Give them both a try!
